The Rotburger was picked early, September 16th 2024, to retain acidity and manage tannins. The fruit was destemmed and fermented on skins for 5 days in stainless steel. After a light press the fermenting wine was transferred to stainless to undergo alcoholic fermentation. After racking we bottled the wine young to undergo a refermentation in bottle for a light effervescence.
