Bonnet-Ponson is a family estate in the Premier Cru village of Chamery in the Montagne de Reims, founded in 1862 by Grégoire Bonnet and now run by Cyril Bonnet. Seconde Nature is a Premier Cru blend of 45% Pinot Noir, 40% Chardonnay, and 15% Meunier grown on calcareous clay soils studded with limestone. The wine is fermented with indigenous yeasts in used 228L and 400L oak barrels and aged on fine lees for 9 months. It is bottled without fining, filtration, or added sulfites, and disgorged with zero dosage as a Brut Nature.
