Pardas Rupestris Blanco is a white natural wine made from a blend of 80% Xarel-lo from 50-year-old vines on limestone and clay, and 20% Malvasía de Sitges, planted in 1996 on alluvial loam and slate. It's fermented and aged six months in century-old concrete tanks, with some bâttonage.
