Distilled at Wayne Gretzky Estates in Niagara-on-the-Lake, Ontario, this fourth release in the limited Craftsmanship Series is crafted from 100% Ontario malted rye aged for 7 years in once-used bourbon and virgin oak barrels. To finish the expression, Master Distiller Tim Wilson fermented house-made ginger beer to season ex-bourbon barrels for 44 days before finishing the 7-year rye in those casks for 12 weeks, creating a 50% ABV spirit with lively citrus, stone fruit, and bright ginger warmth.
Food Pairing: Spicy Thai curry, jerk chicken, fish tacos, ginger snaps, smoked pork belly, or key lime pie.
Tasting Notes: Rich copper gold with warm orange highlights and medium-to-heavy viscosity along the glass.
Nose: Delicate and aromatic, opening with toasted oak, elderflower, lemonade, and lime peel, followed by ripe pear, potpourri, stone fruit, and soft ginger spice.
Palate: Vibrant and spice-forward on the palate, featuring sweet ginger, candied orange zest, and lime upfront before evolving into stone fruit, oak tannins, and gentle baking spices.
Finish: Long and warming with lingering notes of sweet ginger root, citrus zest, and toasted wood spice.
